Ingredients

  • 8 slices of bread
  • 4 ripe tomatoes, sliced
  • 8 slices of mozzarella cheese
  • 4 tablespoons of butter, softened
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat a griddle or a non-stick pan over medium heat.

  2. Butter one side of each slice of bread.

  3. Place 4 slices of bread, butter-side down, onto the griddle or pan.

  4. Top each bread slice with 1 slice of mozzarella cheese.

  5. Arrange the tomato slices on top of the cheese.

  6. Season with salt and pepper.

  7. Place another slice of mozzarella cheese on top of the tomatoes.

  8. Cover each sandwich with another slice of bread, butter-side up.

  9. Cook the sandwiches for about 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.

  10. Remove from the heat and let the sandwiches cool for a minute.

  11. Cut each sandwich in half diagonally and serve hot, garnished with fresh basil leaves.
