Ingredients

  • 4 slices of bread
  • 200g cheddar cheese, grated
  • 2 tbsp Marmite
  • 1 large onion, thinly sliced
  • 1 tbsp butter
  • 1 tbsp brown sugar

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. In a small pan, melt the butter over medium heat. Add the sliced onions and cook until softened, about 5 minutes.

  3. Stir in the brown sugar and continue cooking for another 2 minutes until the onions are caramelized and sticky.

  4. Toast the bread slices lightly.

  5. Spread a thin layer of Marmite on one side of each bread slice.

  6. Divide the grated cheddar cheese between 2 of the bread slices, on top of the Marmite.

  7. Top each with the remaining bread slices, Marmite side down.

  8. Place the sandwiches on a baking sheet and bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.

  9. Remove from the oven and cut each sandwich in half diagonally.

  10. Serve the Rarebit Toasties with Sticky Marmite Onions warm.
