  • 4 slices of thick bread (such as brioche or challah)
  • 3 eggs
  • 1/2 cup canned pumpkin puree
  • 1/2 cup milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • Butter, for cooking
  • Powdered sugar, for serving
  • Maple syrup, for serving

Instructions

  1. In a shallow bowl, whisk together the eggs, pumpkin puree, milk, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt.

  2. Heat a large non-stick skillet or griddle over medium heat and melt a small pat of butter.

  3. Dip a slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side.

  4. Place the soaked bread onto the hot skillet and cook until golden brown and crispy on each side, about 3-4 minutes per side.

  5. Repeat with remaining bread slices, adding more butter to the skillet as needed.

  6. Serve the pumpkin pie French toast hot, dusted with powdered sugar and drizzled with maple syrup.
