Ingredients
- 4 baguettes
- 200g prawns
- 100g beansprouts
- 4 eggs
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Fresh coriander leaves, for garnish
Instructions

Slice the baguettes in half, lengthwise. Remove some of the bread in the center to create a hollow.

In a bowl, whisk the eggs with salt and pepper.

Heat vegetable oil in a large frying pan over medium heat. Add prawns and cook until pink, then add beansprouts and cook for another 2 minutes.

Pour the whisked eggs over the prawns and beansprouts. Cook for a few minutes until the omelette is set.

Transfer the omelette onto one half of each baguette. Drizzle with soy sauce and sesame oil.

Garnish with fresh coriander leaves.
