Ingredients

  • 8 slices of halloumi cheese
  • 2 medium-sized beetroots, roasted and sliced
  • 4 slices of crusty bread
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Fresh basil leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. Brush the halloumi slices with olive oil and grill for 2-3 minutes on each side, until golden and slightly crispy.

  3. In a small bowl, whisk together the remaining olive oil and balsamic vinegar to make a dressing.

  4. Toast the slices of bread.

  5. Layer the grilled halloumi and roasted beetroot slices on the toasted bread.

  6. Drizzle the dressing over the sandwich and season with salt and pepper.

  7. Garnish with fresh basil leaves.

  8. Serve the halloumi & beetroot open sandwiches immediately.
