Ingredients
- 4 large chicken breasts
- 4 medium-sized sweet potatoes, peeled and cut into slices
- 2 tablespoons of olive oil
- 2 tablespoons of honey
- 1 tablespoon of soy sauce
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 4 large tortilla wraps
- 2 cups of mixed salad leaves
- 2 tomatoes, sliced
Instructions

Preheat the oven to 400°F (200°C).

Place the sweet potato slices on a baking sheet and drizzle with olive oil, honey, soy sauce, garlic powder, salt, and pepper. Toss to coat evenly, then roast in the oven for 25-30 minutes or until sticky and caramelized.

Meanwhile, heat a grill pan or skillet over medium-high heat. Season the chicken breasts with salt, pepper, and garlic powder on both sides. Cook the chicken for about 6-8 minutes on each side or until cooked through and nicely charred. Remove from heat and let rest for a few minutes before slicing into strips.

Warm the tortilla wraps according to package instructions.

To assemble the wraps, layer each tortilla with a handful of mixed salad leaves, sliced tomatoes, sticky sweet potato slices, and sliced chicken breasts. Roll tightly, tucking in the sides as you go.
