Ingredients

  • 4 large chicken breasts
  • 4 medium-sized sweet potatoes, peeled and cut into slices
  • 2 tablespoons of olive oil
  • 2 tablespoons of honey
  • 1 tablespoon of soy sauce
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 4 large tortilla wraps
  • 2 cups of mixed salad leaves
  • 2 tomatoes, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the sweet potato slices on a baking sheet and drizzle with olive oil, honey, soy sauce, garlic powder, salt, and pepper. Toss to coat evenly, then roast in the oven for 25-30 minutes or until sticky and caramelized.

  3. Meanwhile, heat a grill pan or skillet over medium-high heat. Season the chicken breasts with salt, pepper, and garlic powder on both sides. Cook the chicken for about 6-8 minutes on each side or until cooked through and nicely charred. Remove from heat and let rest for a few minutes before slicing into strips.

  4. Warm the tortilla wraps according to package instructions.

  5. To assemble the wraps, layer each tortilla with a handful of mixed salad leaves, sliced tomatoes, sticky sweet potato slices, and sliced chicken breasts. Roll tightly, tucking in the sides as you go.

  6. Cut the wraps in half diagonally and serve immediately.
