How To Make Warm New Potato & Smoked Mackerel Salad

Ingredients
- 500g new potatoes, halved
- 200g smoked mackerel fillets, flaked
- 1 red onion, thinly sliced
- 100g cherry tomatoes, halved
- 50g baby spinach leaves
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

Place the new potatoes in a pot of boiling water and cook for 10-12 minutes, or until tender. Drain and set aside.

In a large bowl, combine the smoked mackerel, red onion, cherry tomatoes, and baby spinach.

Add the warm new potatoes to the bowl and toss gently to combine.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Drizzle the dressing over the salad and toss to coat evenly.
