Serves:
Ingredients
- 2 duck breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups mixed greens
- 1 cup walnuts, chopped
- 1 orange, segmented
- 2 tbsp olive oil
- 2 tbsp orange juice
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
-
Preheat the oven to 400°F (200°C). Score the skin of the duck breasts and season with salt and pepper.
-
Heat a large oven-safe skillet over medium-high heat. Place the duck breasts skin side down and cook for 3-4 minutes until the skin is browned and crispy. Flip and cook for another 2 minutes.
-
Transfer the skillet to the preheated oven and cook for 10-12 minutes for medium-rare, or until desired doneness. Remove from the oven and let rest for 5 minutes before slicing.
-
In a large salad bowl, combine the mixed greens, chopped walnuts, and orange segments.
-
In a small jar, combine the olive oil, orange juice, balsamic vinegar, Dijon mustard, salt, and pepper. Shake well to emulsify the dressing.
-
Drizzle the dressing over the salad and toss to coat evenly.
-
Slice the duck breasts and arrange on top of the salad. Serve warm.
