Ingredients
- 1 can of kidney beans, drained and rinsed
- 1 can of cannellini beans, drained and rinsed
- 1 can of chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the kidney beans, cannellini beans, chickpeas, cherry tomatoes, red onion, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the bean mixture and toss to coat.

Allow the salad to marinate for at least 10 minutes before serving.
