- 2 cans of tuna, drained
- 1 can of butterbeans, rinsed and drained
- 1 red onion, thinly sliced
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 cup of cherry tomatoes, halved
- 1/4 cup of black olives, sliced
- 1/4 cup of fresh parsley, chopped
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions

In a large bowl, combine tuna, butterbeans, red onion, red bell pepper, cucumber, cherry tomatoes, black olives, and parsley.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Pour the dressing over the salad and toss to combine.
