Ingredients
- 4 skinless, boneless chicken breasts
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp ground ginger
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper (optional, for heat)
- Juice of 1 lemon
- 200g low-fat Greek yogurt
- 2 tbsp mango chutney
- 2 tbsp low-fat mayonnaise
- Salt and pepper, to taste
- Fresh coriander, for garnish
Instructions

Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Add the ground cumin, ground coriander, turmeric, paprika, ground ginger, cinnamon, and cayenne pepper (if using). Stir well to combine and cook for another minute.

Add the chicken breasts to the pan and cook for about 5 minutes on each side, or until cooked through.

In a separate bowl, mix together the Greek yogurt, mango chutney, low-fat mayonnaise, and lemon juice. Season with salt and pepper.

Once the chicken is cooked, remove from the pan and let it rest for a few minutes. Then, slice the chicken into thin strips.

Add the sliced chicken to the yogurt sauce and stir well to coat.

Serve the Coronation Chicken with rice, salad, or in a sandwich. Garnish with fresh coriander.
