How To Make Sticky Sausage & Sweet Potato Salad

Ingredients
- 4 sticky sausages
- 2 large sweet potatoes, diced
- 1 red onion, thinly sliced
- 2 cups baby spinach leaves
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- 2 tablespoons balsamic glaze
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C). Arrange the sticky sausages and diced sweet potatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper.

Roast for 25 minutes, or until the sausages are cooked through and the sweet potatoes are tender.

In the meantime, heat a pan over medium heat and cook the sliced red onion until softened and slightly caramelized, about 5 minutes.

In a large bowl, combine the baby spinach, dried cranberries, and crumbled feta cheese. Toss to mix well.

Once the sausages and sweet potatoes are cooked, slice the sausages into bite-sized pieces and add them to the bowl with the spinach mixture. Add the cooked red onion as well.

Drizzle the balsamic glaze over the salad and toss to coat everything evenly.
