How To Make Steak & Vietnamese Noodle Salad

Ingredients

  • 1 lb sirloin steak, thinly sliced
  • 8 oz rice noodles
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1 cup bean sprouts
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh Thai basil leaves
  • 1/4 cup chopped peanuts
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 clove garlic, minced
  • 1 red chili, sliced

Instructions

  1. Cook rice noodles according to package instructions. Drain and rinse with cold water.

  2. In a small bowl, whisk together fish sauce, lime juice, soy sauce, brown sugar, garlic, and red chili.

  3. Season steak with salt and pepper. Heat a grill or skillet over high heat and cook steak for 2-3 minutes per side for medium-rare. Let it rest for 5 minutes, then slice.

  4. In a large bowl, combine rice noodles, sliced steak, cucumber, carrot, bean sprouts, mint leaves, cilantro leaves, Thai basil leaves, and chopped peanuts.

  5. Pour the dressing over the salad and toss to combine.

  6. Serve the salad chilled or at room temperature.
