How To Make Spiced Veg with Lemony Bulgur Wheat Salad

Ingredients
- 2 cups of bulgur wheat
- 4 cups of vegetable broth
- 2 tablespoons of olive oil
- 1 red onion, sliced
- 2 bell peppers, sliced
- 2 zucchinis, sliced
- 2 teaspoons of cumin
- 2 teaspoons of paprika
- 1 teaspoon of turmeric
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

In a saucepan, bring the vegetable broth to a boil. Add the bulgur wheat, cover, and simmer for 10-15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

In a large skillet, heat the olive oil over medium heat. Add the red onion and sauté for 2 minutes.

Add the bell peppers and zucchinis to the skillet. Cook for 5-7 minutes or until the vegetables are tender.

Sprinkle the cumin, paprika, and turmeric over the vegetables. Stir to coat evenly.

In a small bowl, whisk together the lemon juice, salt, and pepper. Pour the mixture over the cooked vegetables and toss to combine.

Remove from heat and serve the spiced vegetables over a bed of cooked bulgur wheat.
