How To Make Spiced Bulgur, Chickpea & Squash Salad

Ingredients
- 1 cup bulgur
- 2 cups vegetable broth
- 1 can chickpeas, rinsed and drained
- 1 small butternut squash, peeled and diced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- Salt and pepper, to taste
- Juice of 1 lemon
- Fresh cilantro, for garnish
Instructions

In a medium saucepan, bring the vegetable broth to a boil. Add the bulgur, cover, and simmer for 15 minutes until tender. Remove from heat and let it cool.

Preheat the oven to 400°F (200°C). In a baking sheet, toss the diced butternut squash with olive oil, cumin, coriander, paprika, salt, and pepper. Roast for 20-25 minutes until golden brown and tender.

In a large bowl, combine the cooked bulgur, roasted squash, and chickpeas.

Drizzle with lemon juice and toss to coat. Season with additional salt and pepper if desired.

Serve the salad garnished with fresh cilantro.
