Ingredients
- 4 chicken breasts
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 pomegranate, arils removed
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions

Preheat grill to medium-high heat.

In a small bowl, mix together paprika, cumin, garlic powder, salt, and black pepper to make the spice rub.

Rub the chicken breasts with olive oil, then generously coat with the spice rub on both sides.

Grill the chicken for about 8-10 minutes per side, or until cooked through.

While the chicken is grilling, prepare the pomegranate salad by combining pomegranate arils, cucumber, red onion, parsley, lemon juice, salt, and pepper in a bowl.

Once the chicken is cooked, remove from the grill and let it rest for a few minutes.

Slice the chicken and serve with the pomegranate salad on the side.
