Ingredients
- 8 large eggs
- 1/2 cup grated parmesan cheese
- 1/2 cup chopped fresh herbs (such as parsley, basil, and chives)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cups mixed greens
- 1/2 cup chopped nuts (such as almonds or walnuts)
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, whisk together the eggs, parmesan cheese, fresh herbs, salt, and black pepper.

Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Pour the egg mixture into the skillet and cook for 3-4 minutes, or until the edges are set.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the center.

In a separate bowl, combine the mixed greens and chopped nuts.

In a small jar with a lid, combine the balsamic vinegar, honey, extra virgin olive oil, salt, and pepper. Close the lid tightly and shake vigorously to emulsify the dressing.

Drizzle the balsamic dressing over the mixed greens and toss to coat.

Serve a slice of frittata alongside a portion of the nutty green salad. Enjoy!
