How To Make Seared Beef Salad with Capers & Mint

Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 tbsp capers
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 cups mixed salad greens
- 1/4 cup fresh mint leaves
- Salt and pepper to taste
Instructions

Season the beef with salt and pepper.

Heat 1 tablespoon of olive oil in a large skillet over high heat.

Sear the beef slices for 2-3 minutes per side until browned and cooked to your desired doneness. Remove from the skillet and let it rest for 5 minutes.

In a small bowl, whisk together the remaining olive oil, balsamic vinegar, and a pinch of salt and pepper.

In a large bowl, combine the cherry tomatoes, red onion, capers, salad greens, and fresh mint leaves.

Drizzle the dressing over the salad and toss to coat.

Slice the rested beef and arrange it on top of the salad.
