Ingredients
- 4 salmon fillets
- 4 slices of prosciutto
- 6 cups of mixed greens
- 1 cup of cherry tomatoes, halved
- 1/2 cup of sliced cucumber
- 1/4 cup of sliced red onion
- 1/4 cup of crumbled feta cheese
- 1/4 cup of sliced almonds
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions

Preheat your grill to medium-high heat. Season the salmon fillets with salt and pepper.

Wrap each salmon fillet with a slice of prosciutto, securing it with toothpicks if needed.

Place the wrapped salmon fillets on the grill and cook for about 4-5 minutes per side, or until the salmon is cooked through and the prosciutto is crispy. Remove from heat and set aside.

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and sliced almonds.

In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper to taste.

Divide the salad among four plates and top each plate with a grilled salmon fillet.
