Ingredients
- 1 pound new potatoes, halved
- 2 cups kale, chopped
- 1/2 cup crumbled feta cheese
- 1 avocado, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

Toss the halved new potatoes with 1 tablespoon of olive oil, garlic powder, salt, and pepper.

Spread the seasoned potatoes on a baking sheet and roast for 20-25 minutes, until golden and crispy.

In a large bowl, combine the chopped kale, roasted potatoes, feta cheese, avocado slices, lemon juice, and the remaining tablespoon of olive oil.

Season with salt and pepper, and toss until everything is well combined.

Serve the salad immediately and enjoy!
