Ingredients
- 8 oz rainbow rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh basil leaves, chopped
- For the dressing:
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions

Cook the rainbow rotini pasta according to package instructions. Drain and rinse with cold water.

In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, red onion, black olives, feta cheese, and fresh basil leaves.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper. Pour the dressing over the pasta salad and toss until well coated.

Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
