- 2 cups shredded rainbow beets
- 1/2 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1/4 cup maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions

In a large bowl, combine the shredded rainbow beets, red cabbage, carrots, pecans, cranberries, and parsley.

In a separate small bowl, whisk together the maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper until well combined.
