  • 2 cups shredded rainbow beets
  • 1/2 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped pecans
  • 1/4 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded rainbow beets, red cabbage, carrots, pecans, cranberries, and parsley.

  2. In a separate small bowl, whisk together the maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper until well combined.

  3. Pour the maple dressing over the beet mixture and toss until everything is evenly coated.

  4. Serve the rainbow beet slaw immediately or refrigerate for later use.
