Ingredients
- 1 small head of radicchio, washed and torn into bite-sized pieces
- 1 small bunch of puntarelle, trimmed and sliced into thin strips
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of lemon juice
- 4 anchovy fillets, minced
- 1 clove of garlic, minced
- Salt and pepper to taste
- Shaved Parmesan cheese, for garnish
Instructions

In a large bowl, combine the radicchio and puntarelle.

In a small bowl, whisk together the olive oil, lemon juice, minced anchovies, minced garlic, salt, and pepper.

Drizzle the dressing over the salad and toss well to coat.

Taste and adjust seasonings if needed.

Divide the salad among four plates.

Garnish with shaved Parmesan cheese.
