- 1 cup quinoa, cooked and cooled
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine the cooked quinoa, cucumber, bell pepper, red onion, cherry tomatoes, feta cheese, parsley, and mint.
