Ingredients
- 1 cup cooked prawns
- 1 cup cooked rice
- 1 ripe mango, peeled and diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, diced
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions

In a jar or airtight container, layer the cooked prawns, cooked rice, diced mango, cherry tomatoes, red onion, cucumber, and chopped cilantro.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the salad in the jar.

Close the jar tightly and refrigerate for at least one hour to allow the flavors to meld together.

When ready to serve, shake the jar to mix the ingredients and enjoy!
