Ingredients
- 6 medium potatoes, peeled and diced
- 6 slices bacon, cooked and crumbled
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 2 green onions, thinly sliced
- Salt and pepper to taste
Instructions

Place the diced potatoes in a pot of salted water and bring to a boil. Cook for about 10-12 minutes until tender, then drain and set aside to cool.

In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to make the dressing.

In a large bowl, combine the cooled potatoes, crumbled bacon, and sliced green onions. Pour the dressing over the potato mixture and gently toss to coat.

Refrigerate for at least 1 hour to allow the flavors to meld together.

Serve chilled and garnish with additional bacon and green onions if desired.
