Ingredients
- 4 medium-sized potatoes, boiled and cubed
- 10 radishes, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

In a large mixing bowl, combine the boiled potatoes, sliced radishes, red onion, and fresh parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the potato and radish mixture and toss gently to coat.
