Ingredients
- 4 fillets of beef, about 6 oz each
- 2 tbsp black peppercorns, crushed
- 1 tsp salt
- 2 tbsp olive oil
- 4 artichoke hearts
- 1 lemon, juiced
- 2 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions

Preheat the grill to medium-high heat.

Season the fillets of beef with crushed peppercorns and salt, pressing the pepper into the meat.

Heat the olive oil in a skillet over medium-high heat. Sear the fillets on each side for about 2-3 minutes, or until desired doneness.

Remove the fillets from the skillet and let them rest for a few minutes.

Meanwhile, brush the artichoke hearts with lemon juice and grill them until charred, about 3 minutes per side. Slice them into quarters.

In a large bowl, combine the mixed salad greens, cherry tomatoes, and red onion.

In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing.

Drizzle the dressing over the salad and toss to coat.
