Ingredients
- 200g prawns, peeled and deveined
- 200g rice noodles
- 1 cup shredded cabbage
- 1 red bell pepper, julienned
- 1 carrot, julienned
- 1/4 cup chopped peanuts
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp grated ginger
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Cook the rice noodles according to package instructions. Rinse with cold water and set aside.

In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, garlic, ginger, salt, and pepper.

In a large skillet, heat some oil over medium heat. Add the prawns and cook until pink and cooked through, about 2-3 minutes per side. Remove from heat and set aside.

In a large bowl, toss together the cooked noodles, shredded cabbage, bell pepper, carrot, and cooked prawns.

Drizzle the peanut butter sauce over the salad and toss until everything is well coated.

Sprinkle chopped peanuts on top and garnish with fresh cilantro.
