Ingredients
- 4 peaches, sliced
- 4 cups of stale bread, cubed
- 1 cup of cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup of basil leaves, torn
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the bread cubes on a baking sheet and drizzle with olive oil. Bake for 10 minutes or until crispy.

In a large bowl, combine the peaches, cherry tomatoes, red onion, and basil leaves.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the vinaigrette.

Add the crispy bread cubes to the bowl with the peaches and vegetables.

Drizzle the vinaigrette over the salad and toss gently to combine.
