Ingredients
- 1 cup of wild rice, cooked
- 1 parsnip, peeled and diced
- 2 cups of spinach leaves
- 1 can of artichoke hearts, drained and chopped
- 1/4 cup of chopped red onion
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped walnuts
- 1/4 cup of crumbled feta cheese
- dressing:
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions

In a large bowl, combine the cooked wild rice, diced parsnip, spinach leaves, chopped artichoke hearts, chopped red onion, chopped parsley, chopped walnuts, and crumbled feta cheese.

In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.

Pour the dressing over the salad and toss gently to combine.
