Ingredients
- 1 cup mixed grains (such as quinoa, bulgur, and farro)
- 2 preserved lemons, finely diced
- 1 bunch fresh parsley, chopped
- 1/2 red onion, thinly sliced
- 1/2 cucumber, diced
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Cook the mixed grains according to package instructions. Once cooked, let cool.

In a large bowl, combine the cooked grains, preserved lemons, parsley, red onion, and cucumber.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the salad and toss well to combine.

Refrigerate for at least 30 minutes to allow the flavors to meld.
