- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeno, seeded and minced
- 1/4 cup chopped fresh cilantro
- dressing:
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions

In a large bowl, combine the cooked rice, black beans, corn, bell pepper, red onion, jalapeno, and cilantro.

In a small bowl, whisk together the olive oil, lime juice, garlic, cumin, salt, and pepper.

Pour the dressing over the rice and bean mixture and toss to combine.
