How To Make Mediterranean Potato Salad

Ingredients

  • 4 medium-sized potatoes, boiled and diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumbers, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the boiled and diced potatoes, olives, cherry tomatoes, cucumbers, red onion, feta cheese, parsley, and dill.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the potato mixture and gently toss until all ingredients are well coated.

  4. Serve immediately or refrigerate for at least 1 hour before serving to allow the flavors to blend.
