Ingredients
- 4 medium-sized potatoes, boiled and cubed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions

In a large bowl, combine the potatoes, cucumber, cherry tomatoes, red onion, olives, and feta cheese.

In a small bowl, whisk together the lemon juice, olive oil, dill, salt, and pepper.

Pour the dressing over the potato mixture and toss gently to coat.
