Ingredients
- 1 cup of lentils
- 1 cup of basmati rice
- 2 beetroots, grated
- 100g of feta cheese, crumbled
- 2 tbsp of olive oil
- 1 tbsp of lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Cook the lentils and rice according to the package instructions. Allow them to cool.

In a bowl, combine the cooked lentils, rice, grated beetroot, and crumbled feta cheese.

In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.

Pour the dressing over the lentil and rice mixture and toss until well coated.

Garnish with fresh parsley before serving.
