Ingredients
- 4 cups of kale, finely shredded
- 2 peaches, sliced
- 1/4 cup of poppy seeds
- 1/4 cup of sliced almonds
- 1/4 cup of dried cranberries
- 1/4 cup of extra-virgin olive oil
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of honey
- Salt and pepper to taste
Instructions

In a large bowl, combine the kale, peaches, poppy seeds, almonds, and cranberries.

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

Pour the dressing over the kale mixture and toss until well coated.
