Ingredients
- 250g halloumi cheese, sliced
- 2 cups broccoli florets
- 1 cup cooked quinoa
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon harissa paste
- Salt and pepper, to taste
Instructions

Preheat a grill or grill pan over medium heat.

In a large mixing bowl, combine the cooked quinoa, broccoli florets, cherry tomatoes, parsley, mint, lemon juice, and olive oil. Season with salt and pepper, and toss to combine.

In a small bowl, whisk together the honey and harissa paste to make the dressing.

Grill the halloumi cheese slices for 2-3 minutes on each side, until golden brown and slightly charred.

Divide the broccoli tabbouleh onto serving plates. Top with grilled halloumi slices.

Drizzle the honey-harissa dressing over the dish.
