How To Make Halloumi with Broccoli Tabbouleh & Honey-Harissa Dressing

Ingredients

  • 250g halloumi cheese, sliced
  • 2 cups broccoli florets
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon harissa paste
  • Salt and pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. In a large mixing bowl, combine the cooked quinoa, broccoli florets, cherry tomatoes, parsley, mint, lemon juice, and olive oil. Season with salt and pepper, and toss to combine.

  3. In a small bowl, whisk together the honey and harissa paste to make the dressing.

  4. Grill the halloumi cheese slices for 2-3 minutes on each side, until golden brown and slightly charred.

  5. Divide the broccoli tabbouleh onto serving plates. Top with grilled halloumi slices.

  6. Drizzle the honey-harissa dressing over the dish.

  7. Serve immediately and enjoy!
