Ingredients
- 2 large aubergines
- 2 tbsp olive oil
- 1/4 cup sultanas
- 1/4 cup pine nuts
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Preheat a griddle pan or barbecue to high heat.

Slice the aubergines into 1/2-inch thick rounds.

Brush both sides of the aubergine slices with olive oil and season with salt and pepper.

Grill the aubergine slices for 3-4 minutes on each side until charred and softened.

Remove the aubergine slices from the griddle pan and let them cool slightly.

In a small bowl, combine the sultanas, pine nuts, parsley, mint, lemon juice, and a drizzle of olive oil.

Arrange the grilled aubergine slices on a platter and spoon the sultana and pine nut mixture over the top.
