- 2anchovies,oil packed
- 1clovesmall garlic
- ½cupflat leaf parsley leaves,packed
- ¼cupbasil leaves,packed
- ¼cupdill,coarsely chopped
- 1tbsporegano leaves
- ¾cupmayonnaise
- 2½tbspfresh lemon juice
- 2tbspchives,snipped
- kosher salt and freshly ground pepper
- 1ciabatta bread loaf
- 1rotisserie chicken
- 8piquillo peppers
- 3celery ribs,inner, with leaves
- ½cupkalamata olives,pitted
Instructions

In a food processor, pulse the anchovies, garlic, parsley, basil, dill, and oregano until coarsely chopped.

Add the mayonnaise and lemon juice and process until smooth. Fold in the chives; season with salt and pepper.

In a large bowl, toss the ciabatta with the chicken, piquillo peppers, celery, and olives. Add the dressing and toss to coat.

Season with salt and pepper and serve.
