Ingredients
- 8 ounces penne pasta
- 1 pound green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted black olives, sliced
- 2 tablespoons chopped fresh parsley
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions

Cook the penne pasta according to package instructions. Drain and set aside.

In a pot of boiling water, blanch the green beans for 3-4 minutes until crisp-tender. Drain and rinse with cold water.

In a large bowl, combine the cooked penne, blanched green beans, cherry tomatoes, olives, and parsley.

In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.

Pour the dressing over the salad and toss to coat everything evenly.
