Ingredients
- 2 cups canned chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions

In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.

In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper.

Pour the dressing over the salad and toss gently to coat all the ingredients.

Sprinkle fresh parsley over the top for garnish.
