Ingredients
- 6 eggs
- 1/2 cup goat’s cheese, crumbled
- 1 large onion, thinly sliced
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper, to taste
- 4 cups mixed greens
- 1 lemon, juiced
- 2 tbsp olive oil
Instructions

Preheat the oven to 180°C (350°F).

In a large frying pan, heat the olive oil over medium heat. Add the sliced onion and cook until caramelised, about 10 minutes.

In a separate bowl, whisk the eggs together and season with salt and pepper.

Pour the whisked eggs into the frying pan with the caramelised onion. Crumble the goat’s cheese over the top.

Transfer the frying pan to the preheated oven and bake for 20-25 minutes, or until the frittata is set and golden brown on top.

While the frittata is baking, prepare the lemony green salad. In a large bowl, combine the mixed greens, lemon juice, and olive oil. Season with salt and pepper to taste.
