- 4 clementines, peeled and segmented

- 1/4 cup of extra virgin olive oil
- 2 tablespoons of lemon juice
- Salt and pepper, to taste

In a large bowl, combine the mixed greens, crumbled feta cheese, clementine segments, sliced almonds, and chopped fresh mint.
