Ingredients
- 8 eggs
- 8 slices of bacon
- 1 can of black beans, drained and rinsed
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1/2 tsp of paprika
- 1/4 tsp of garlic powder
- 1/4 tsp of onion powder
- 1/4 cup of grated cheddar cheese
- 2 green onions, chopped
Instructions

In a large skillet, cook the bacon until crispy. Remove from the skillet and set aside on a paper towel-lined plate.

In the same skillet, drain most of the bacon grease, leaving about 1 tablespoon.

In a bowl, whisk together the eggs, salt, black pepper, paprika, garlic powder, and onion powder.

Pour the egg mixture into the skillet with the reserved bacon grease and cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked to your desired consistency.

In a separate small saucepan, heat the black beans until warmed through.

To assemble the bowl, divide the scrambled eggs, bacon, and black beans evenly among four bowls.

Top each bowl with grated cheddar cheese and chopped green onions.
