- 1 lb potatoes, peeled and diced
- 1 cup broad beans, blanched and peeled
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp Dijon mustard
- 2 green onions, thinly sliced
- Salt and pepper to taste
Instructions

Boil the diced potatoes in salted water until tender. Drain and let cool.

In a large bowl, combine the cooked potatoes and broad beans.

In a separate bowl, mix together the mayonnaise, sour cream, Dijon mustard, green onions, salt, and pepper.

Pour the dressing over the potato and broad bean mixture. Toss gently to combine.
