Ingredients
- 2 medium courgettes, thinly sliced
- 1 cup couscous
- 1 cup boiling water
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup toasted pine nuts
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
- For the dressing:
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions

In a large bowl, pour the boiling water over the couscous. Cover with a plate and let it sit for 5 minutes.

Fluff the couscous with a fork and let it cool completely.

In a separate bowl, whisk together the tahini, lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.

Add the sliced courgettes, herbs, pine nuts, and feta cheese to the cooled couscous.

Pour the dressing over the salad and toss gently to combine. Season with salt and pepper to taste.

Serve chilled or at room temperature.
