- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 1 jalapeno pepper, seeded and finely chopped
- 1/4 cup chopped fresh cilantro
- juice of 1 lime
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions

In a large bowl, combine the black beans, corn, bell pepper, red onion, jalapeno pepper, and cilantro.

In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.

Pour the dressing over the bean mixture and toss to combine.
