How To Make Classic Caesar Salad with Homemade Croutons

Ingredients
- 1 head of romaine lettuce, washed and torn into pieces
- 1 cup of homemade croutons (recipe below)
- 1/2 cup of grated Parmesan cheese
- 2 tablespoons of freshly squeezed lemon juice
- 2 cloves of garlic, minced
- 1/4 cup of extra virgin olive oil
- 2 anchovy fillets, mashed (optional)
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
- homemade croutons:
- 4 slices of day-old bread, cut into cubes
- 2 tablespoons of olive oil
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
Instructions

Preheat the oven to 350°F (175°C).

In a bowl, toss the bread cubes with olive oil, garlic powder, salt, and pepper until well coated. Spread them out in a single layer on a baking sheet.

Bake the croutons for 8-10 minutes, or until golden brown and crispy. Remove from the oven and set aside.

In a large salad bowl, combine the lemon juice, minced garlic, olive oil, mashed anchovies (if using), Dijon mustard, salt, and pepper. Whisk until well blended.

Add the torn romaine lettuce to the bowl and toss to coat evenly with the dressing.

Sprinkle the grated Parmesan cheese over the salad and top with the homemade croutons.
