Ingredients
- 2 boneless, skinless chicken breasts
- 1 mango, sliced
- 200g rice noodles
- 1 red bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 3 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 tablespoons sesame oil
Instructions

Season the chicken breasts with salt and pepper, then grill or pan-fry until cooked through. Let them rest for a few minutes, then slice into strips.

Cook the rice noodles according to the package instructions. Drain and rinse with cold water to stop the cooking process.

In a large bowl, combine the cooked noodles, sliced mango, bell pepper, cucumber, cilantro, and mint leaves.

In a small bowl, whisk together the lime juice, soy sauce, honey, and sesame oil. Pour the dressing over the salad and toss gently to combine.

Add the sliced chicken to the salad and toss again to coat everything in the dressing.
